1. All honey will crystallize in time. Pure, raw honey will crystallize faster than cut honey, and if honey is stored in the refrigerator the crystallization process will increase. If honey crystallizes, remove lid and place jar in warm water until crystals dissolve. Or, microwave (in a microwave safe container) until crystals dissolve. Do not boil or scorch.
2. Honey from your local area can definitely help your allergies. The pollen, that may cause the sneezing and watery eyes, is collected by the bees who then use it to make honey. Regularly ingesting small amounts of honey containing local pollen counteracts other allergens. So start taking about a teaspoon of honey in your morning coffee every day.
3. When substituting honey for granulated sugar in recipes:
Substitute honey for up to one-half of the sugar.
Reduce the amount of liquid in the recipe by 1/4 cup for each cup of honey used in baked goods.
Add about 1/2 teaspoon baking soda for each cup of honey used in baked goods.
Reduce oven temperature by 25 degrees F to prevent over-browning of baked goods.
